Avocado and almond smoothie bowl

Smoothie bowls are like smoothies but just thicker so you eat them with a spoon from a bowl with delicious toppings. Perfect for a filling, nutritious breakfast or a healthy snack at any time of the day. I particularly love the flavour of the almond butter on top with the berries along with the smooth, creamy taste of the avocado and spinach. This is a super healthy recipe and also really fills you up! This recipe is enough for 1 large bowl for 1 hungry person or you could make it stretch to 2.



You will need -

FOR THE SMOOTHIE:

1 avocado

1 banana

50g spinach

150ml plant based milk (I used almond)

1 tsp Chia seeds


FOR THE TOPPINGS:

A handful of blueberries

A tablespoon of almond butter


  1. Put all the smoothie ingredients together into a blender and blend until a thick consistency. It only takes 5-10 seconds.

  2. Spoon out the mixture into a bowl.

  3. Add the toppings. It really could not be easier!


OTHER IDEAS:

Try using different berries and/or different nut butters, such as, peanut butter or cashew butter. You could also add some mixed seeds on top or a few extra Chia seeds. If you want to up the protein content you could easily add some protein powder to the mix. Just watch the consistency as it may need a bit more milk. It should be a thick, spoonable consistency.
